Quinoa is known for it’s many health benefits, containing antioxidant and anti-inflammatory plant compounds. High in fibre, quinoa can help support gut health and is the perfect accompaniment to any meal.

Ingredients

1 tsp coconut oil

1 cup quinoa

2 cups water

1 tsp turmeric (optional)

1/2 tsp salt
Method
Heat a pan over a medium heat and add the coconut oil. Rinse the quinoa and add this to the pan. Allow this to toast for a minute and then add the water, turmeric and salt. Cover with a lid and bring this to the boil. Once boiling, turn the heat down to a simmer and cook for 10 minutes. Remove from the heat and allow the quinoa to steam for a further 10 minutes. Fluff the quinoa with a fork and serve.
