So easy to make, this spicy, yet refreshing ginger and lemon soda is perfect for any time of year, and only requires 4 ingredients.
1x Large Piece of Ginger (around 15cm)
3-4 tbsp Agave Nectar (Or Honey)
Sparkling Water To Serve
Start by peeling the ginger and chopping into a few large pieces. Place this in a pan and add 4 cups of water (1L). Bring this to the boil and then leave to simmer for 20 mins. Set aside and allow to cool.
In the meantime, add the juice of the lemon to a jug and add 3 tbsp of the agave nectar. Then blend the ginger with the liquid until smooth. Add this to the jug with the remaining ingredients and taste, adding more agave/ honey if you would like it sweeter.
To serve, add 80-100ml of the ginger/ lemon juice to a glass with ice, and top up with 100ml of sparkling water.
Store the remaining juice in a bottle in the fridge and use within 2-3 days.
