Curried Sweet Potato Soup

A sweet yet spicy warming winter soup, this makes the ideal healthy weeknight dinner. If you don't have sweet potato, you can switch in butternut squash instead.


1 onion

1 large sweet potato

4 carrots

1 garlic clove

1 tsp curry powder

1/2 tsp chilli powder 

1.5L vegetable stock 


Heat the oil over a medium heat, then add the onions and cook for 6-8 minutes, stirring regularly until soft. Add in the garlic and cook for another 2 minutes. Stir in the curry powder and chilli powder.

Add in the carrots and sweet potato and cook for a few minutes, stirring regularly - add in some water if they start to stick. Add in the stock and lentils then bring to the boil and leave to simmer for around 25 minutes until the vegetables are soft. 

Leave the soup to cool, then blend. Add in any seasoning to taste.
